Anyone out there who has tried cookie decorating, be it one time or who has made a career from it (like me), knows the anxiety of icing. Namely, the right consistency. I spent years outlining then piping back and forth to fill in. Pros: one icing, skips steps. Cons: You see the lines. So then I delved into flooding. Pros: beautiful backgrounds. Cons: Soooo many steps, so many variables. Well there is an in-between. The perfect consistency icing that lets you outline and pipe to fill and still get beautiful backgrounds. But you have to mix your icing to such a precise place, that a speck of sugar could bring it all down. How, oh, how do you teach that? Callye found a way.
