Easy To Make Ice-cream Sandwiches

Our very easy DIY Ice Cream sandwiches are perfect for last-minute entertaining and bowl-free eating. The first recipe, our own creation is made using store-bought cookies. You can use boxed cookies or supermarket-baked cookies the choice is yours.  For a yummy icecream cookie, there is no need to stress trying to find the time to bake your own cookie base. This cheats version (I hate calling it that) is my #1 go-to dessert for adult dinner parties.

INGREDIENTS:

Half Gallon Vanilla Ice Cream or another favorite, use fancy icecreams such as salted caramel or chunkies for different flavors

Use a rum and raisin icecream and add some rum for an alcoholic desert or a baileys irish cream ice cream.  You can find some homemade Icecream recipes here in our previous article.

16 Store-bought MnM’s cookies

Mini chocolate chips

Coconut flakes

Sliced almonds

Walnut pieces

Sprinkles

 

DIRECTIONS:

Place your toppings in separate bowls.

Place an ice cream scoop on top of an upside-down cookie.

 

Place a right-side-up cookie on top and gently press down.

Even out any ice cream that has spilt out of the sandwich using a knife or an icing spatula.

Toppings of your choice should be rolled into the dough.

If the topping doesn’t seem to stick, press it onto the ice cream with your palm.

Place the ice cream sandwich on a cookie sheet that has been lined with parchment paper or baking non stick paper.

To harden, place in the freezer for 10-20 minutes.

Wrap each ice cream sandwich in parchment paper before placing it in a gallon freezer storage bag.

Ice cream sandwiches can be kept in the freezer for a few weeks.

When you’re ready to eat one, set it out on a dish to cool for a few minutes before eating it, since the cookies will be firm.
