1. Citrus Salad with Honey-Lime Dressing:

Ingredients:

  • Mixed greens (e.g., lettuce, spinach, arugula)

  • Red onion (thinly sliced)
  • Toasted nuts (e.g., almonds, walnuts)

    • Juice of 1 lime
    • 2 tablespoons olive oil
    • 1 tablespoon honey
    • Salt and pepper to taste

Instructions:

  1. Wash and dry the mixed greens, then arrange them on a serving plate.
  2. Arrange the citrus fruit segments on top of the greens.
  3. Scatter the thinly sliced red onion, toasted nuts, and crumbled feta cheese over the salad.
  4. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad just before serving. Toss gently to coat all the ingredients.

2. Lemon Garlic Roasted Chicken:

Ingredients:

  • Chicken pieces (legs, thighs, breasts)
  • Lemons (sliced)
  • Fresh thyme or rosemary sprigs
  • Garlic cloves (peeled)
  • Olive oil
  • Salt and pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken pieces in a roasting pan or baking dish.
  3. Drizzle olive oil over the chicken and season with salt and pepper.
  4. Place lemon slices, fresh thyme or rosemary sprigs, and peeled garlic cloves around and on top of the chicken pieces.
  5. Roast in the preheated oven for about 35-45 minutes or until the chicken is cooked through and golden brown.
  6. Serve the lemon garlic roasted chicken with the roasted citrus slices and herbs as a flavorful garnish.

3. Orange Glazed Salmon:

Ingredients:

  • Salmon fillets
  • Oranges (juiced and zested)
  • Soy sauce
  • Honey
  • Ginger (grated)
  • Garlic (minced)
  • Red pepper flakes (optional)
  • Salt and pepper

Instructions:

  1. In a bowl, whisk together the orange juice, orange zest, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes (if using).
  2. Place the salmon fillets in a shallow dish and pour half of the orange glaze over them. Marinate for about 15-20 minutes.
  3. Preheat a skillet over medium-high heat. Add a drizzle of oil.
  4. Remove the salmon from the marinade and place it in the skillet. Season with salt and pepper.
  5. Cook the salmon for about 3-4 minutes on each side or until cooked to your desired level of doneness.
  6. Pour the remaining orange glaze over the cooked salmon just before serving.

4. Grapefruit Avocado Salsa:

Ingredients:

  • Grapefruit segments (chopped)
  • Avocado (diced)
  • Red onion (finely chopped)
  • Fresh cilantro (chopped)
  • Jalapeno (seeded and minced)
  • Lime juice
  • Salt and pepper

Instructions:

  1. In a bowl, combine the chopped grapefruit segments, diced avocado, finely chopped red onion, chopped cilantro, and minced jalapeno.
  2. Drizzle fresh lime juice over the mixture and gently toss to combine.
  3. Season the salsa with salt and pepper to taste.
  4. Allow the flavors to meld together for about 10-15 minutes before serving.
  5. Serve the grapefruit avocado salsa with tortilla chips or as a topping for grilled chicken or fish.

5. Lime Coconut Sorbet:

Ingredients:

  • Coconut milk (full-fat)
  • Fresh lime juice
  • Lime zest
  • Sugar (adjust to taste)
  • Shredded coconut (optional, for garnish)

Instructions:

  1. In a blender, combine the coconut milk, fresh lime juice, lime zest, and sugar. Blend until smooth.
  2. Taste the mixture and adjust the sweetness if needed by adding more sugar.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a sorbet-like consistency.
  4. Transfer the sorbet to a freezer-safe container and freeze for a few hours until firm.
  5. Scoop the lime coconut sorbet into serving bowls and garnish with shredded coconut, if desired.
