When I eat a cookie, I want it to be soft and chewy. The gluten-free cookies that I have tried are usually the opposite. Michaell at Foodscape is in agreement with me and has created a softer gluten-free chocolate chip cookie. While I’m trying to eat healthier, it can be hard to let go of some of the comfort foods, such as baked goods. I’ll give this recipe a try and see if my family will like this healthier version.
