I am sure the Queen would be very proud of these easy to make Eccles cakes. Not only are they easy to make, they taste great too! I actually made a double batch and popped them in the freezer (uncooked) ready to go when guests pop over.
You will need a ready made puff pastry sheet for this recipe.
4 sheets of pastry sliced into 4 each sheet
60 grams of butter
60 grams of sugar
2 pinches of mixed spice or cinnamon
2 cups of raisins
1 egg white for glaze and sugar to sprinkle on top.
Steps:
Mix the butter, sugar, mixed spice and cinnamon in a pan. Melt all the ingredients together and turn off the heat. Add the raisins
Scoop a spoonful of mixture in to each square of pastry and then bring the sides up to form a money bag.
Gently push the tuft down and roll in your hands to form a flat rounded shape. I found singing patty cake patty cake as I worked inspired my patting. You are free to sing whatever you like.
Finish off with 3 snips on top with a pair of scissors, a wash of egg white and a sprinkle of sugar.
Bake for 20 mins or until golden brown in an oven at 350F.
These are best served warm.
For freezing simply freeze separately and then bag once frozen.

You forgot the raisins in the recipe. Mix with the spiced butter, right?
