It’s apt to follow my last post with a nerd-themed one: The Periodic Table of Baked Goods. The table, “The Periodicity of Baked Goods in the USA” was created by electrical engineer Michael Ohene for the blog Cooking for Engineers. It applies arithmetic to three variables: moistness, butter/oil content, and egg content to determine what defines the fundamentals of baked goods. {spotted on Chow}
