It’s almost Friday and this is the perfect end to a long week! The recipe is for one glass, but that doesn’t mean you can’t make more. You could also skip the Bailey’s if you would like to make it kid friendly or enjoy during the day, when you can’t quite relax yet.

And let’s not forget these Baileys Irish cream Chips for baking I found recently, let me just say these are perfect straight out of the bag! A few accidentally fell into my mouth whilst cooking with them.
They are amazing as a substitute for choc chips in any basic choc chip recipe.
Baileys Irish Cream Cookies
125g Butter softened (I like the salted)
3/4cup Bailey’s Baking Chips
1/2 cup Brown sugar
1/3 cup Caster sugar
1 Egg
1tsp Vanilla essence
1 1/2 cups Self-raising flour
Preheat oven to 160 degrees fan-forced and grease a cookie baking tray Cream together butter and sugars until like fluffy and white then add egg and vanilla. Stir in flour and add the chips
Roll 1 tbsp of the mixture into a ball and place on the prepared baking tray (baking paper used) And cook for 15 minutes or until golden
