My best friend of over ten years is from Chile, so I am well aware of the lure of dulce de leche. Yet I’ve only tried it once…when used in an unbelievably moist cake dripping in the sweet milk. Dulce de leche, a milk-based syrup, is prepared by slowly heating sweetened milk. As I’ve come across it twice in my recent blog searches, I figured it was time for a post. First, the wonderful blog, “Not Quite Nigella,” has a detailed, step-by-step recipe for dulce de leche with accompanying photographs and lovely anecdotes.

Next, find a yummy looking recipe for Bem Casado (a traditional Brazilian dessert served at weddings) on the also-wonderful blog, Within the Corners of My Kitchen. The blog offers a recipe and how-tos for creating the two mini cakes joined with a dulce de leche filling.
