How to Make Tomato Soup Using Fresh Tomatoes
To make delicious tomato soup using fresh tomatoes, follow these steps:
Preparation:
Wash and chop 1-1.25kg (2lb 4oz-2lb 12oz) ripe tomatoes 5.
Peel and chop 1 medium onion, 1 small carrot, and 1 celery stick 5.
Roasting:
Preheat your oven to 200°C (180°C fan).
Place the chopped tomatoes, onion, carrot, and celery on a baking tray.
Drizzle with 2 tablespoons of olive oil and roast for about 25-30 minutes until the vegetables are soft and slightly charred 5.
Blending:
Transfer the roasted vegetables to a blender or food processor.
Add 2 tablespoons of tomato purée.
Blend until smooth 5.
Cooking:
Heat 2 tablespoons of olive oil in a large pot over medium heat.
Pour in the blended mixture and cook for 5 minutes, stirring occasionally 5.
Add 2 cups of chicken broth and bring to a simmer. Cook for an additional 15 minutes 1.
Seasoning:
Season the soup with salt, pepper, and any additional herbs or spices to taste 4.
Serving:
Serve the tomato soup hot, optionally garnished with fresh basil or a drizzle of cream 4.
