Sometimes you want homemade cookies. Sometimes you want homemade-ish cookies. And sometimes you want cookies on a plate before anyone notices you forgot you were meant to bring something to the party.

That is exactly where boxed cookie mix and refrigerated cookie dough earn their place in the pantry. I will never judge a shortcut in the kitchen, especially when it means warm cookies, less washing up, and no one standing there at 9 p.m. measuring flour with the enthusiasm of a tired possum.

The good news is that store-bought cookie dough does not have to taste plain or predictable. With just one or two easy add-ins, you can make boxed cookies taste more homemade, add better texture, and give them that “oh yes, I definitely baked today” feeling without starting from scratch.
