I couldn’t resist popping over from my usual blog BathnBody to share with you this recipe my daughter I adapted today. We have seen lot’s of recipes for cake mix this and cake mix that but this was our first time in tweaking a recipe. I don’t normally use cake mixes but being able to give my 7 year old the freedom in the kitchen from time to time makes the 70 cent cake mix packets a blessing.
She added to a standard cake mix packet the following ingredients.
2 eggs
1 tsp of Vanilla extract
and 1/2 cup of oil.
Mix all the ingredients together and form into balls. At first we thought the mixture was too oily, but if we had used any less the cookies would have been way to dry. We rolled each cookie ball in some icing sugar and placed in large balls onto our greased tray. We cooked the cookies for around 20 mins on 160′ deg Celsius. We finished off with a dusting of icing sugar.
You could cook these a little longer for a crunchy cookie or a little less for a soft bake cookie too. My daughter said they were the BEST cookies she had ever tasted but as the chef she was a little biased.

I’ve been making cookies from cake mix for decades, using that same basic recipe from Heloise. She didn’t add vanilla, but did say to add a cup of nuts or chips, if desired. (My favorite is to use a devil’s food chocolate mix, with pecans and peanut butter chips. YUM!) I learned to make smallish cookie balls and to squash them down in the middle before baking. (Also, using parchment paper lined pans is a huge plus.) Bake at 350 degrees for 10 minutes. Delicious!
