A cake you don’t have to share, but can enjoy and indulge without guilt. We all love the convenience of a mug cake, especially when you are home alone and craving cake. This cake is great for one or two on St. Patrick’s Day or whenever. I’m not a coffee drinker, so I’ll try it without the coffee.

And let’s not forget these Baileys Irish cream Chips for baking I found recently, let me just say these are perfect straight out of the bag! A few accidentally fell into my mouth whilst cooking with them.
They are amazing as a substitute for choc chips in any basic choc chip recipe.
Baileys Irish Cream Cookies
125g Butter softened (I like the salted)
3/4cup Bailey’s Baking Chips
1/2 cup Brown sugar
1/3 cup Caster sugar
1 Egg
1tsp Vanilla essence
1 1/2 cups Self-raising flour
Preheat oven to 160 degrees fan-forced and grease a cookie baking tray Cream together butter and sugars until like fluffy and white then add egg and vanilla. Stir in flour and add the chips
Roll 1 tbsp of the mixture into a ball and place on the prepared baking tray (baking paper used) And cook for 15 minutes or until golden
