When asked to participate in the holiday blog hop, I wonder how Edible Crafts would fit in. Most of the foods we talk about aren’t really healthy, but then I thought of course we would work. How else can you get your picky eaters to eat their veggies? You hide the veggies in the food. Why healthy eating? Maybe you want a life style change, you have an illness that needs a dietary change, or you need new ways to sneak those veggies into the picky eater. This book is for you! People aren’t kidding when they say this is more than just a cook book. It is your encyclopedia to a healthier you. Plus, it comes from someone that like us, used to eat the unhealthy foods that was comforting growing up. Heather Crosby helps you plan what equipment you need in your kitchen, supplies you need for the recipes and then goes one step further in actually walking you through how to put all together and create amazing recipes. They were nice enough to let me include a recipe that would be great for Thanksgiving:
Try something new this holiday season—Roasted Garlic Cauliflower Mash instead of potatoes! Cauliflower is an excellent source of vitamin C, manganese and antioxidants, so serve them with Easy & Amazing Gravy and enjoy all the surprised, happy expressions around the table.
TOOLS?: Steamer?Large pot with lid?Chef’s knife?Food processor (or a masher and elbow grease)
INGREDIENTS?: Try to buy everything organic. Here’s why.?1 head cauliflower, florets removed and chopped?7-10 cloves garlic, roasted?1 tbsp extra virgin cold-pressed coconut oil?1/2 tsp fine ground sea salt?Fresh ground pepper to taste
STEPS?
Steam your cauliflower florets, covered with a lid, for 20 minutes or until you can easily pierce with a fork.
While steaming, roast your garlic either on a parchment-lined cookie sheet in the oven (350F) for 7 minutes, or in a skillet over low/medium heat until browned.
Place all ingredients in the food processor and pulse until super creamy. No food processor? Use elbow grease, a masher and/or potato ricer to get that creamy consistency.
Season with salt and pepper to taste and enjoy!
Store in the fridge in an airtight glass container for up to 7 days.
Planning ahead? Make this recipe 1-2 days in advance, store in the fridge and reheat on the stovetop or in the oven.
