I love caprese salads in any form, but I think I love this vegan version even better. Using avocado in place of the cheese, perfection! Emilie Eats using brown rice pasta. I have to say that I prefer it over the wheat pastas, since I’m watching my carb intake. For me it takes on the flavors of the sauce and flavors mixed in rather than over power them. A great salad for your spring and summer events.
