  • 1 tbsp apple cider vinegar

  • 2 tsp honey (raw honey if you have it)

  • Kosher salt and freshly cracked pepper to taste

How to Make Rhubarb Salsa (Step-by-Step)

  1. Blanch the Rhubarb – Bring 2 cups of water to a boil and quickly blanch the diced rhubarb for 10–20 seconds. Drain and run cold water over it to stop the cooking process. Pat dry with a paper towel.

  2. Mix the Veggies – In a medium bowl, combine the bell peppers, onion, scallions, jalapeño, and cilantro. Gently stir in the blanched rhubarb.

  3. Make the Dressing – In a small bowl, dissolve the honey into the lime juice and apple cider vinegar. Pour over the salsa mixture.
