Rainbow Poke Cupcakes

Have you ever had a poke cake before? It is a basic cake with holes poked in it and then you pour jello into the holes. It’s a yummy surprise, when you take a bite.

These are really cute cupcakes that will look good at any party during the year, but we’ll start with St. Patrick’s Day. Jenni at Sweet Pennies from Heaven creates these sweet treats using a white boxed cake, lime gelatin and easy homemade icing.
