Easter Bunny Espresso Martini Slushie

If you love a good grown-up Easter treat, this Easter Bunny Espresso Martini Slushie is such a fun one to make. It has that creamy iced coffee flavor, a little cocktail kick, and just enough Easter novelty to make it feel special without turning into a full kitchen production.

I also love that this one looks far fancier than the effort involved. Honestly, if you pop a little whipped cream on top and perch a chocolate bunny on the rim, people assume you’ve gone all-out. Meanwhile you’re standing there knowing it was mostly just pouring things in and letting the machine do the heavy lifting.

This is the kind of recipe that works brilliantly for Easter brunch, an adults-only Easter gathering, or even just one of those “I bought the chocolate bunnies for the kids and somehow they mysteriously ended up in my cocktail” moments.

Easter Bunny Espresso Martini Slushie Recipe

Serves 6

Ingredients

  • 1.25 litres iced coffee milk
  • 1/2 cup vanilla vodka
  • 1/2 cup Kahlúa
  • 1/3 cup Baileys
  • Easter chocolate bunnies, to serve, optional
  • whipped cream, to serve, optional
  • cocoa powder, to serve, optional

How to Make an Easter Espresso Martini Slushie

  1. Chill everything well first.
    The colder your ingredients are, the better your slushie texture will be.
  2. Mix the base.
    Pour the iced coffee milk, vanilla vodka, Kahlúa, and Baileys into a large jug and stir well.
  3. Add to your slushie machine.
    Pour the mixture into your Ninja Slushi or frozen drink maker, making sure not to overfill.
  4. Process until thick and icy.
    Let the machine run until the mixture reaches a smooth slushie consistency.
  5. Serve in martini glasses.
    Top with whipped cream if using, dust lightly with cocoa powder, and add a small Easter chocolate bunny for a playful finish.
