Some Thanksgiving treats are almost too full of personality to eat. These chocolate fudge turkeys have round little bodies, colourful tail feathers and wonderfully wide eyes, as though they’ve just realised which holiday is approaching.
I love an edible craft that gives you something to make as well as something to serve. These would be a cheerful addition to a Thanksgiving dessert table, especially if you enjoy shaping small decorations and bringing a character to life.
The project is by Beth Klosterboer at Hungry Happenings. Her chocolate fudge turkey tutorial includes the complete recipes and illustrated assembly instructions.
Ingredients and Equipment
Beth offers chocolate peanut butter and chocolate caramel versions for the bodies. The decorations use modelling chocolate or fondant, food colouring, candy eyes, pretzel sticks and a little corn syrup to attach the details.
Have mixing bowls, a spoon or scoop, a clean work surface and a lined tray ready. Check the original tutorial for quantities and the supplies needed for your chosen version.
How the Fudge Turkeys Come Together
This is a brief overview of Beth’s method.
- Prepare the fudge and allow it to reach the consistency specified in the recipe.
- Shape the bodies and reserve some mixture for the heads and necks.
- Make the coloured feathers, wings, beaks, wattles and feet.
- Assemble using pretzel pieces for support and attach the edible details as directed.
- Finish with candy eyes and arrange on a serving plate.

Give Each Turkey Some Personality
I’d prepare the coloured pieces before assembling the bodies, with a separate little area for each colour. Having everything within reach makes detailed decorating feel less fiddly.
Don’t worry if every turkey looks slightly different. A tilted head or uneven feather fan can give these little characters their own expression.
A Cheerful Thanksgiving Display
A plain serving plate lets the colourful feathers stand out. Arrange the turkeys with a little space around each one so their feet and tails remain visible.
For a different handmade touch to your table, our Ferrero Rocher Thanksgiving turkey favours use wrapped chocolates and craft materials to create place-setting decorations.
These fudge turkeys are a lovely choice when you want the making to be part of the fun. Put aside a little decorating time, bring out your autumn-coloured ingredients, and enjoy creating a small flock for the dessert table.
