Chocolate Baileys Irish Cream Filled Beer Mug Cakes

March 11, 2014 by Carolyn Bickford

Beth at Hungry Happenings is always sending us amazing creations. Whenever I am stuck for a creative recipe, I know I can find inspiration on her blog. The actual recipe and directions are featured on Tablespoons.com, but you can get there from Beth’s page too.

I think I’ll skip the real beer and take two of these with a shot of Baileys Irish Cream, please.

Looking for more Bailey recipes? Check out this Baileys Irish cream Cookbook.

Do you enjoy Irish Cream? Who doesn’t, after all? I liked it so much that I started adding it in a lot of my meals, and the results were fantastic! I discovered that adding the sweet, rich flavor of Irish Cream to practically any recipe improves it. The options for what you can accomplish with it are virtually limitless! This recipe book has cocktails, desserts, sides, soups, and entrees that all use Irish cream to produce the most delicious foods.

If you are concerned about the use of alcohol in these recipes, bear in mind that many of them ask for the Irish cream to be added at the beginning of the meal. This means that a large portion of the alcohol will be boiled out.

And let’s not forget these Baileys Irish cream Chips for baking I found recently, let me just say these are perfect straight out of the bag!   A few accidentally fell into my mouth whilst cooking with them.

They are amazing as a substitute for choc chips in any basic choc chip recipe.

How To Make Chicken Soup: Cozy Homemade Chicken Soup Recipes For Every Kind Of Cold Day

There are some recipes that just feel like being looked after, and chicken soup is right up there with warm blankets, clean sheets, and someone else doing the dishes.

If you’ve been wondering how to make chicken soup that actually tastes homemade and comforting, this roundup is a lovely place to start. Some of these chicken soup recipes begin with a whole chicken and a proper slow-simmered broth, while others are quicker weeknight versions using leftover roast chicken, rice, noodles, ginger, or whatever vegetables are lurking in the fridge drawer.

Let’s be honest, chicken soup is one of those things we all think we know how to make… until it turns out a bit watery, bland, or sad-looking. The secret is usually in the base: good broth, softened aromatics like onion, carrot, and celery, enough seasoning, and not overcooking the noodles until they turn into a pot of mush. Learned that one the hard way.

These recipes cover everything from classic chicken noodle soup to chicken and rice soup, ginger chicken soup, slow cooker chicken soup, and easy homemade chicken soup ideas for those nights when dinner needs to be warm, soothing, and not too fussy.

Classic Homemade Chicken Soup From Scratch

If you want to learn how to make chicken soup the proper old-fashioned way, Classic Chicken Soup from Serious Eats is a wonderful starting point. This recipe uses a whole chicken, vegetables, garlic, herbs, and water to build a rich broth from the ground up.

This is the kind of soup you make when you want the kitchen to smell like someone’s grandmother has moved in for the afternoon. It takes a little longer than opening a carton of stock, but the flavour is deeper, rounder, and much more comforting.

It is also a great base recipe to learn from. Once you understand how the broth is made, you can easily add noodles, rice, extra vegetables, or fresh herbs to make it your own.

Homemade Chicken Noodle Soup From Scratch

For a classic bowl of chicken noodle soup, Homemade Chicken Noodle Soup From Scratch from RecipeTin Eats is a strong choice. It has that lovely balance of tender chicken, vegetables, broth, and noodles that makes chicken soup such a comfort food favourite.

This is a good recipe for anyone searching for how to make chicken noodle soup from scratch without feeling overwhelmed. The instructions are practical, clear, and very doable for a home cook.

I also like that this one feels like proper dinner, not just a light broth. Add some crusty bread on the side and you have the sort of meal that makes everyone go quiet for a few minutes, which in my house usually means it is working.

Easy Homemade Chicken Noodle Soup

If you want something simple, affordable, and family-friendly, Chicken Noodle Soup from Budget Bytes is a great option. It keeps the ingredients practical and budget-conscious while still giving you a warm, homemade bowl of soup.

This is the kind of recipe I would bookmark for busy weeks when you want something cosy but do not want to spend half the day making stock. It is approachable, easy to follow, and ideal for beginner cooks.

For readers looking for an easy chicken soup recipe, this one ticks all the boxes. It is not fancy, and that is exactly why it works.

Chicken And Rice Soup

If noodles are not your thing, Chicken and Rice Soup from RecipeTin Eats is a beautiful alternative. The rice makes the soup hearty and filling, while the chicken and broth keep it gentle and comforting.

This recipe is especially useful for readers searching for how to make chicken soup with rice. Chicken and rice soup is one of those meals that feels nourishing without being complicated, and it is a lovely option for cold weather, sick days, or simple family dinners.

Just remember that rice keeps soaking up broth as it sits. If you are making this ahead, you may need to add a little extra stock when reheating leftovers.

Crock Pot Chicken And Rice Soup

For a flexible recipe that works on the stovetop or in the slow cooker, Chicken and Rice Soup from The Cozy Cook is worth adding to your list. It uses simple seasoning, tender vegetables, chicken, and rice to create a cosy dinner with very little drama.

I love recipes like this because they give you options. Some days you want to stand at the stove and stir lovingly. Other days you want to throw everything in the slow cooker and walk away before someone asks what is for dinner for the fourth time.

This is a practical chicken soup recipe for families, meal prep, or those weeks when the weather is miserable and everyone seems to be sniffling.

Quick Chicken Noodle Soup With Leftover Chicken

If you need dinner fast, Quick Chicken Noodle Soup from Picklebums uses leftover roast chicken, stock, vegetables, and rice vermicelli noodles. This is a clever recipe for using what you already have rather than starting from scratch.

It is especially handy after a roast chicken dinner, because the leftover meat can be turned into something warm and useful the next day. I am always a fan of recipes that make leftovers feel intentional instead of like a container you are avoiding in the fridge.

This is a good option for readers searching for how to make chicken soup quickly or chicken soup with leftover chicken.

Chicken Noodle Soup With Ginger

For a simple, soothing version, Chicken Noodle Soup from BBC Good Food includes ginger in the broth. Ginger adds a gentle warmth that works beautifully in chicken soup, especially during cold and flu season.

This recipe is light, easy, and comforting without being heavy. It is a nice one to include when you want a homemade chicken soup that feels fresh and bright.

A little ginger goes a long way, so this is also a good recipe for anyone who likes their chicken soup to feel extra restorative without becoming too spicy.

Turmeric Ginger Chicken Soup

For a golden, nourishing twist, The Best Chicken Soup Recipe from Ambitious Kitchen includes ginger, turmeric, vegetables, chicken, and couscous. It has a lovely colour and a modern feel while still being warm and comforting.

This recipe is a great choice for readers who want something a bit more vibrant than traditional chicken noodle soup. Turmeric gives the broth a beautiful golden glow, while ginger adds warmth and depth.

It is also very Pinterest-friendly. Golden broth, tender chicken, fresh herbs, and a cosy bowl? That is exactly the kind of soup people save for later.

Feel-Good Chicken Soup With Rice Noodles

Feel Good Chicken Soup With Ginger Over Rice Noodles from A Hint of Rosemary is a lighter, fragrant chicken soup with ginger, lemon, and rice noodles. It feels fresh but still comforting.

This is a lovely choice if you want a chicken soup recipe that does not feel too heavy. The rice noodles make it a little different from the usual egg noodle version, and the lemon helps lift the broth.

It is the sort of soup I would make when I want something warm but not stodgy. Very much a “curl up on the couch with a bowl” recipe.

Chicken Rice Noodle Soup

Chicken Rice Noodle Soup from A Beautiful Plate is another gentle rice noodle option. It is simple, soothing, and faster than many traditional from-scratch chicken soup recipes.

This one is a good reminder that chicken soup does not always need to follow the same carrot-celery-egg-noodle path. Rice noodles bring a different texture, and they work beautifully in a clear, flavourful broth.

If you are building a roundup around how to make chicken soup, including a few variations like this helps readers find a recipe that suits their mood, pantry, and cooking time.

How To Make Chicken Soup Taste Better

A good chicken soup starts before the liquid goes in. Soften your onion, carrot, and celery first, and give them time to become fragrant. This little step makes a big difference to the flavour of the final soup.

Use a good-quality broth if you are not making your own stock. Homemade stock is lovely, but there is no shame in using boxed broth when life is busy. Just taste as you go, because some broths are saltier than others.

Chicken thighs are a good choice if you want tender meat that is harder to overcook. A whole chicken gives you a richer broth if you have the time. Leftover roast chicken is perfect when you want soup quickly.

Add herbs and flavour boosters. Bay leaves, thyme, parsley, garlic, ginger, turmeric, lemon juice, cracked pepper, or a little chilli oil can all change the flavour without making the recipe complicated.

If you are using noodles, consider cooking them separately if you plan to store leftovers. Noodles love to drink up broth overnight, and nobody wants to open the fridge to find one large chicken noodle brick.

What To Serve With Chicken Soup

Chicken soup is perfectly good on its own, but I do love something on the side for dunking. Crusty bread, garlic toast, savoury scones, cheese toasties, or simple buttered rolls all work beautifully.

For a lighter meal, serve chicken soup with a green salad or some sliced fruit. For a bigger dinner, add a baked potato or a simple sandwich on the side.

If you are making soup for someone who is unwell, keep it simple. A clear broth-style chicken soup with tender chicken, soft vegetables, and rice or noodles is usually the most comforting.

Can You Freeze Chicken Soup?

Yes, chicken soup freezes well, but there is one small trick. If your soup has noodles or rice, they can become very soft after freezing and reheating. For best results, freeze the broth, chicken, and vegetables, then add fresh noodles or rice when you reheat it.

Let the soup cool completely before freezing, then store it in freezer-safe containers. Label it with the date, because freezer mysteries are how we end up playing “is this soup or casserole?” three months later.

Chicken soup is one of those brilliant make-ahead meals that feels like a gift to your future self.

More Cozy Soup Ideas

Once you know how to make chicken soup, it becomes easy to adapt. Add rice for a heartier meal, noodles for a classic version, ginger for warmth, lemon for brightness, or extra vegetables when the fridge drawer is looking a bit crowded.

You can make it from scratch with a whole chicken, keep it quick with leftover roast chicken, or let the slow cooker do most of the work. That is the beauty of chicken soup. It is forgiving, flexible, and almost always exactly what someone needs.

So whether you are cooking for a sick day, a chilly evening, or just one of those weeks where everyone needs feeding and nobody has much energy left, homemade chicken soup is always worth having in your recipe list.
