Besides peppermint and gingerbread, I’m thankful for pomegranates this time of year. A fruit rich in antioxidants and other nutrients, that surprisingly many people haven’t tried. Give it a try. I’m not big on cold items when it is cold out, but I’ll crank up the heat a little higher to enjoy this over the holidays.

I still haven’t finish planning my Thanksgiving menu and yet I’m excited about making sandwiches and now this with the leftovers. It’s kind of like making lasagna, it tastes better the next day. This can be made the day after Thanksgiving or use deli meat for a quick week night meal during the fall and winter months.
