
There is a particular kind of morning when an apple cinnamon muffin feels like exactly the right thing. The kettle is on, the kitchen smells of warm spice, and suddenly the apples that have been sitting in the fruit bowl all week have a purpose.
These muffins are a lovely option for breakfast, a lunchbox treat or an afternoon cup of tea. What caught my eye about Jenn’s recipe at Sweet T Makes Three is her focus on getting apple flavour throughout the muffin, so you’re not left searching for the one good bite with a piece of fruit in it.
I’d make a batch when apples are plentiful and keep a few aside for the next day. They’re also the sort of thing that makes a weekend brunch feel a little more thoughtful without requiring you to be up at dawn. Put them on a plate while they’re still slightly warm and I doubt anyone will ask whether you made the batter from scratch before coffee.
