Pineapple & Vodka Punch

Pineapple and vodka make a winning combination in this sweet and refreshing punch. Perfect for summer barbecues, pool parties, or just sipping on a warm day, this drink is sure to be a hit with your guests. Here’s how to make it:

Ingredients:

1 cup vodka
1 cup pineapple juice
1/2 cup orange juice
1/4 cup lime juice
1/4 cup simple syrup
2 cups club soda
Pineapple wedges and lime slices, for garnish
Instructions:

In a large pitcher, combine the vodka, pineapple juice, orange juice, lime juice, and simple syrup. Stir well to combine.
Add the club soda to the pitcher and stir gently.
Fill glasses with ice and pour the punch over the ice.
Garnish each glass with a pineapple wedge and a lime slice.
Serve and enjoy!
You can adjust the ingredients to suit your taste. If you prefer a sweeter punch, add more simple syrup. If you like it tangier, add a little more lime juice. And if you want to make it even more tropical, try adding a splash of coconut rum or a handful of frozen strawberries.

This punch is a great make-ahead option for entertaining. Simply mix everything together in the pitcher and refrigerate until ready to serve. Add the club soda just before serving so it stays nice and fizzy.

And if you’re looking for a non-alcoholic option, just leave out the vodka and add a little more club soda or a splash of sparkling water.

Pineapple Pancakes

Pancakes for breakfast just got a tropical twist with these delicious pineapple pancakes topped with creamy coconut whipped cream. Perfect for a lazy Sunday brunch or a special occasion, these pancakes are sure to be a hit with the whole family. Here’s how to make them:

Ingredients:

For the Pancakes:

1 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 cup diced fresh pineapple
For the Coconut Whipped Cream:

1 can of full-fat coconut milk, chilled overnight
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:

To make the pancakes, in a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fold in the diced pineapple.
Heat a large non-stick pan or griddle over medium heat. Scoop 1/4 cup of batter onto the pan for each pancake.
Cook until small bubbles form on the surface, then flip and cook until the other side is lightly golden, about 2 minutes per side.
To make the coconut whipped cream, remove the can of coconut milk from the fridge and turn it upside down. Open the can and drain off the liquid.
Scoop the solid coconut cream into a large bowl and beat with an electric mixer until light and fluffy.
Add the powdered sugar and vanilla extract and continue to beat until well combined.
Serve the pancakes hot with a generous dollop of coconut whipped cream on top.
These pineapple pancakes are a great way to incorporate a little bit of tropical flavor into your breakfast routine. The juicy bits of fresh pineapple add a sweet and fruity element, while the creamy coconut whipped cream takes them over the top. And if you want to get even more creative, try adding a drizzle of honey or a sprinkle of toasted coconut flakes on top.

These pancakes are best served fresh, so if you’re making them for a crowd, you may want to make a double batch. And if you have leftovers, they can be stored in the fridge for up to 3 days and reheated in the microwave or on the stovetop.

So, if you’re looking for a fun and delicious way to start your day, give these pineapple pancakes with coconut whipped cream a try. Your taste buds will thank you!

My DIY Pineapple Icecream

Made with just a few simple ingredients, it’s a breeze to whip up and the perfect way to cool down. Here’s how to make it:

Ingredients:

2 cups diced fresh pineapple
1/2 cup granulated sugar
2 cups heavy cream
1 cup whole milk
1 teaspoon vanilla extract
Pinch of salt
Instructions:

In a large saucepan, combine the diced pineapple and sugar. Cook over medium heat, stirring occasionally, until the pineapple has released its juices and the sugar has dissolved, about 5 minutes.
Remove the pan from the heat and let the mixture cool to room temperature.
In a large bowl, whisk together the heavy cream, whole milk, vanilla extract, and pinch of salt.
Stir in the cooled pineapple mixture.
Pour the mixture into an ice cream maker and freeze according to the manufacturer’s instructions.
Once the ice cream has reached the desired consistency, transfer it to a freezer-safe container and freeze for at least 4 hours, or until firm.
This pineapple ice cream is the perfect balance of sweet and tangy, with just a hint of vanilla. The creaminess of the ice cream is offset by the juicy bits of fresh pineapple, making it a refreshing and satisfying treat. And best of all, it’s super easy to make and requires no special equipment.

If you prefer a smoother texture, you can blend the pineapple mixture in a food processor before adding it to the cream mixture. And if you like a little crunch, try adding some toasted coconut flakes or chopped nuts to the mix.
