Nothing tastes better than a juicy piece of turkey that has been roasting in the oven, especially since the smell of it sweltering is enough to make your mouth water! Let’s be honest, if you’re hosting a large dinner gathering for a special occasion or roasting a turkey just because there is always enough remaining to make several leftover turkey recipes. And there are only so many leftover turkey and mayo sandwiches one person can eat, am I right?!

19. Curried Turkey Casserole from Skinny Ms.

Leftover turkey is an important item in our house. Leftover turkey is what we feed off of for the days following Thanksgiving. Allowing us time to rest and recover but not having to cook big meals, it’s like living at an all-you-can eat restaurant that makes life easier; just go to the fridge and food is there and ready to go.

For us, leftover turkey is a convenience that we are thankful for. It is a reminder of the good times had with family and friends, and of the bountiful feast that was shared. It is a sign of hope that there will be many more Thanksgivings to come, with all the same great food and company

Here are my personal top 5 Turkey Sandwich ideas.

1. Thanksgiving Panini Delight: Layer slices of leftover turkey with cranberry sauce, brie cheese, and baby spinach between two slices of your favorite bread. Grill the sandwich until the cheese is melted and gooey, and the bread is toasted to perfection. The sweet-tart cranberry sauce, creamy brie, and tender turkey create a symphony of flavors that’s sure to satisfy.

2. Turkey Club Extravaganza: Build a classic club sandwich by stacking layers of leftover turkey, crispy bacon, lettuce, tomato, and avocado between three slices of toasted bread. Spread a thin layer of mayonnaise or your preferred sauce on each slice for an extra kick of flavor. This triple-decker delight offers a harmonious combination of textures and tastes.

3. Mediterranean-Inspired Turkey Wrap: Embrace a lighter option by rolling slices of turkey, hummus, roasted red peppers, cucumber, and feta cheese in a large spinach or whole wheat tortilla. This wrap bursts with freshness, as the hummus adds creaminess, the roasted red peppers provide sweetness, and the feta contributes a tangy kick.

4. Spicy Turkey and Slaw Sandwich: Mix leftover turkey with a spicy chipotle mayo, then pile it onto a roll along with crunchy coleslaw. Need a nice Alfredo Sauce? Here is my own Alfredo sauce recipe, perfect for turkey pasta.

Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 2 cloves garlic, minced
  • 2 cups (480ml) heavy cream
  • 1 1/2 cups (150g) grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Chopped parsley or basil for garnish

Instructions:

  1. Melt Butter and Sauté Garlic:
    • In a large skillet or saucepan, melt the butter over medium heat.
    • Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant. Be careful not to let the garlic burn.
  2. Add Heavy Cream:
    • Pour the heavy cream into the skillet with the melted butter and garlic.
    • Stir the mixture gently and let it simmer over medium-low heat for about 5-7 minutes, stirring occasionally, until it starts to thicken slightly.
  3. Add Parmesan Cheese:
    • Gradually add the grated Parmesan cheese to the cream mixture, stirring continuously until the cheese is melted and the sauce is smooth and creamy. This usually takes about 2-3 minutes.
    • Continue to cook the sauce for another 2-3 minutes, stirring occasionally, until it reaches your desired consistency. If the sauce becomes too thick, you can add a little more cream to thin it out.
  4. Season and Serve:
    • Taste the sauce and season with salt and pepper according to your preference. Remember that Parmesan cheese is already salty, so you may not need much additional salt.
    • Once the sauce is seasoned to your liking and has reached the desired consistency, remove it from the heat.
    • Serve the Alfredo sauce immediately over cooked pasta of your choice, such as fettuccine, linguine, or spaghetti.
    • Garnish with chopped parsley or basil if desired, and serve hot.
