Rhubarb Frangipane Tart – A Delightful Spring Dessert

Celebrate the vibrant flavors of spring with this Rhubarb Frangipane Tart. Combining the tartness of fresh rhubarb with the sweet, nutty richness of almond frangipane, this elegant dessert is perfect for special occasions or a weekend baking project. The crisp pastry crust encases a luscious almond filling, topped with beautifully arranged rhubarb stalks that not only add flavor but also create a stunning visual appeal.

 Why You’ll Love This Tart

  • Seasonal Ingredients: Showcases fresh rhubarb, a springtime favorite.

  • Elegant Presentation: The arranged rhubarb makes for a show-stopping dessert.

  • Rich Flavor: The almond frangipane offers a sweet, nutty contrast to the tart rhubarb.

  • Versatile: Suitable for brunches, tea parties, or as a dinner dessert.

 Ingredients

For the Pastry Crust:

  • 1½ cups all-purpose flour

  • ½ cup powdered sugar

  • ¼ teaspoon salt

  • ½ cup unsalted butter, cold and cubed

  • 1 large egg yolk

  • 2 tablespoons cold water

For the Almond Frangipane Filling:

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 cup almond flour

  • 1 teaspoon vanilla extract

  • ¼ teaspoon almond extract

For the Rhubarb Topping:

  • 4-5 stalks fresh rhubarb, trimmed and cut into desired shapes

  • 2 tablespoons granulated sugar (optional, for sprinkling)

Instructions

  1. Prepare the Pastry Crust:

    • In a food processor, combine flour, powdered sugar, and salt.

    • Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.

    • Add egg yolk and cold water; pulse until the dough comes together.

    • Turn the dough onto a floured surface, shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

  2. Blind Bake the Crust:

    • Preheat the oven to 375°F (190°C).

    • Roll out the chilled dough and fit it into a tart pan.

    • Line with parchment paper and fill with pie weights or dried beans.

    • Bake for 15 minutes, remove weights and parchment, and bake for an additional 5 minutes until lightly golden.

    • Let cool.

  3. Prepare the Frangipane Filling:

    • In a bowl, cream together softened butter and granulated sugar until light and fluffy.

    • Add eggs one at a time, beating well after each addition.

    • Mix in almond flour, vanilla extract, and almond extract until smooth.

  4. Assemble the Tart:

    • Spread the frangipane filling evenly into the cooled tart shell.

    • Arrange the rhubarb pieces on top in a decorative pattern.

    • Sprinkle with granulated sugar if desired.

  5. Bake the Tart:

    • Bake at 350°F (175°C) for 40-45 minutes, or until the frangipane is set and golden.

    • Allow the tart to cool before slicing and serving.

 Tips for Success

  • Chill the Dough: Ensures a flaky crust.

  • Uniform Rhubarb Pieces: For even baking and a polished look.

  • Check for Doneness: The frangipane should be set and lightly golden.

 Serving Suggestions

Serve slices of this tart with a dollop of whipped cream or a scoop of vanilla ice cream. A drizzle of honey or a sprinkle of powdered sugar can add an extra touch of sweetness.
