18 Recipes To Make With Brown Over Ripe Bananas

We have all done it, bought more bananas than our kids can eat, or maybe the weather turned and your bananas went brown. Don’t throw them out! Instead, check out these 18 recipes that use over riped bananas that have turned brown. Brown bananas can still be used especially for cooking. In fact, the simplest thing you can do with brown bananas makes is make a Banana milkshake in the blender with Banana and milk, or freeze them and save them for later.

The amazing thing about frozen bananas is that they make your smoothies thick like a thick shake and of course, super chilled for summertime smoothies or cocktails. (Just add some Baileys Irish liqueur to 1 cup of milk and 1 frozen banana) . Here are some recipes from my own recipe file, I hope you enjoy them . 

Banana Ice Cream

If you’re looking for a sweet, creamy and healthy dessert option, then look no further than my homemade banana ice cream recipe. Not only is it vegan, gluten-free and dairy-free, but it’s also incredibly simple to make, requiring just three ingredients!

Ingredients:

3 ripe bananas
2 tablespoons of almond milk
2 tablespoons of maple syrup
Instructions:

First, slice the bananas into rounds and freeze them overnight.
Once the bananas are frozen, place them in a food processor or high-speed blender.
Add in the almond milk and maple syrup, and blend until smooth and creamy, stopping to scrape down the sides as needed. This may take several minutes, so be patient.
Transfer the mixture to a freezer-safe container and freeze for at least 3 hours or until firm.
Before serving, let the ice cream sit out for a few minutes to soften. Scoop and enjoy!
Tip: You can also add in other flavors or toppings like cocoa powder, nuts or fruit to customize your ice cream.

Banana Bread Cookies

These soft and chewy banana bread cookies are the perfect snack or dessert. They’re made with ripe bananas, whole wheat flour and a touch of cinnamon and vanilla.

Ingredients:

2 ripe bananas
1 cup of whole wheat flour
1/2 teaspoon of baking powder
1/2 teaspoon of cinnamon
1/2 teaspoon of vanilla extract
1/4 cup of coconut sugar
2 tablespoons of coconut oil, melted
1/2 cup of chopped walnuts (optional)
Instructions:

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
Mash the bananas in a large bowl until smooth.
In a separate bowl, mix together the flour, baking powder and cinnamon.
Add the dry ingredients to the mashed bananas and mix until just combined.
Stir in the vanilla extract, coconut sugar, melted coconut oil, and chopped walnuts (if using).
Scoop rounded tablespoon-sized portions onto the prepared baking sheet.
Bake for 15-18 minutes, or until the edges are lightly golden.
Let the cookies cool for 5 minutes on the baking sheet before removing to a wire rack to cool completely.
Serve warm or at room temperature.
Tip: These cookies also freeze well, so you can make a batch and enjoy them later.
