We love cucumber kimchi, growing up it was my favorite compared to the cabbage version. Plus, it is a great way to use up the extra cucumbers in the garden. Most people turn their noses up to the fermented cabbage kimchi, but the cucumber kimchi isn’t as potent and doesn’t have to sit long for flavors. Really give it a try. A great side dish during the summer months.
