4 Ingredient Easy Mac and Cheese: My Go-To Comfort Dinner for Sharing

Sometimes the nicest thing you can do for someone is make them dinner. Nothing fancy, nothing that needs instructions longer than the meal itself. Just something warm, comforting and ready to eat when cooking is the last thing on their mind.

This 4 ingredient easy mac and cheese is my go-to dinner for friends and family who need a little love. A difficult week, a new baby, someone feeling overwhelmed, or simply one of those days when everything seems harder than it should. A dish of cheesy pasta won’t fix everything, but it can take one small job off someone’s shoulders.

I love that it uses everyday ingredients and doesn’t require making a separate cheese sauce. There’s no roux, no gradually adding milk and no standing at the stove trying to whisk out lumps while answering messages.

You cook the macaroni, stir together the cheese mixture and bake it briefly until the top has lovely golden patches. Simple enough for an ordinary weeknight, comforting enough to share.

Easy Baked Mac and Cheese Without a Roux

The shortcut here is evaporated milk and eggs. Together with grated cheddar, they create a rich coating around the pasta as it bakes.

This is a softly set baked macaroni cheese, rather than the loose sauce you might expect from a stovetop version. Serve it warm, while the cheese is melted and the pasta is moist.

There are four main ingredients, with optional salt and pepper from the pantry. No flour, butter or cream required.

4 Ingredient Easy Mac and Cheese Recipe

Serves: 4 modest portions or 2–3 generous main meals
Preparation: Approximately 5 minutes
Pasta cooking: Approximately 8–12 minutes
Baking: 10–15 minutes
Total time: Approximately 25–30 minutes

You’ll need: A saucepan, colander, mixing bowl and shallow ovenproof baking dish approximately 25 cm across.

Ingredients

  • 250 g dried macaroni
  • 250 g tasty cheddar cheese, grated
  • 250 ml unsweetened evaporated milk
  • 2 large eggs

Optional seasoning: Salt and freshly ground black pepper, to taste.

Check the tin before you start: you need evaporated milk, not sweetened condensed milk. Similar packaging, very different dinner!

Instructions

  1. Preheat the oven.
    Heat the oven to 220°C conventional or 200°C fan forced. Have your shallow baking dish ready.
  2. Cook the pasta.
    Cook the macaroni according to the packet instructions until just tender. Drain well.
  3. Prepare the cheese mixture.
    While the pasta cooks, whisk the eggs and evaporated milk together in a mixing bowl. Stir in the grated cheese.
  4. Combine everything off the heat.
    Return the drained macaroni to the saucepan, keeping it off the burner. Pour over the cheese mixture and stir promptly until the pasta is evenly coated. Add pepper and a little salt if needed. Do not return the saucepan to the heat.
  5. Fill the baking dish.
    Spoon the macaroni mixture into the shallow dish and spread it evenly. Scrape in any cheese mixture remaining in the saucepan.
  6. Bake until just ready.
    Bake for 10–15 minutes, checking from 10 minutes. The top should have golden patches and the centre should be hot and softly set, with no liquid egg mixture remaining. Timing may vary with your oven and baking dish.
  7. Serve warm.
    Allow it to stand for a couple of minutes before serving. Take it out of the oven once cooked rather than leaving it inside to keep warm, which can make the coating firm and grainy.

My Tips for Getting It Right

Keep the Saucepan Off the Burner

The egg mixture needs to coat the pasta without scrambling. Mix it into the drained macaroni off the heat and transfer it straight to the baking dish.

This isn’t a sauce that needs simmering on the stove.

Use a Wide, Shallow Dish

A shallow dish helps the centre cook during the short baking time. It also gives you more of that golden top, which tends to be the bit everyone eyes off first.

Avoid packing the mixture into a small, deep casserole.

Have the Oven Properly Heated

Preheat while you prepare the ingredients and cook the pasta. The brief bake works best when the oven is already at temperature.

Don’t Overbake It

You’re looking for a hot, softly set centre and some golden colour on top. You don’t need every piece of macaroni to turn brown.

Too much cooking can make the eggs firm and the pasta dry.

Choose a Cheese With Some Flavour

Tasty cheddar works beautifully here. Mature cheddar is another option if you enjoy a stronger cheese flavour.

Grating a block yourself is worth doing when convenient, as pre-grated cheese can contain anti-caking ingredients that affect how it melts.

Making This Dinner for Someone Who Needs Some Love

When I’m making this for someone else, I like to keep the whole meal easy. A little salad, some cherry tomatoes or steamed vegetables are plenty alongside the pasta.

If you’re delivering it hot, arrange a time when they’re ready to eat. This mac and cheese is at its nicest freshly baked, rather than after a long journey or an extended wait.

Use an oven-safe dish and let them know that it contains wheat, milk and eggs. Check any dietary needs before cooking, especially when taking food to a household you don’t usually cook for.

A simple note is lovely, too: “Dinner is sorted tonight.” No grand gesture required.

Optional Extras From the Fridge

The plain four-ingredient version is wonderfully straightforward, but you can add a little something extra if it suits the people you’re feeding.

  • Chopped cooked ham for a heartier dish.
  • Cooked, well-drained broccoli for a vegetable addition.
  • Peas, cooked with the macaroni during the final couple of minutes.
  • A small spoonful of Dijon mustard stirred into the egg and milk mixture.

These additions take it beyond four ingredients, of course. Keep them modest, and drain vegetables well so they don’t introduce too much extra moisture.

What to Serve With It

A crisp green salad is my first choice. Sliced cucumber, tomatoes or steamed green beans also work well, and none of them needs much fuss.

You can serve smaller portions beside roast chicken or grilled vegetables, too. If you’re planning a larger family meal and want another comforting side, our slow cooker scalloped potatoes are another idea to save.

Frequently Asked Questions

Do I cook the macaroni before baking?

Yes. This is not a no-boil recipe. Cook and drain the macaroni first, as the short baking time is for heating and setting the cheese mixture.

Can I use ordinary milk?

Stick with evaporated milk for this recipe. Ordinary milk is thinner and may give a different consistency.

Can I leave out the eggs?

The eggs help thicken and set the mixture. Omitting them would require a different method, rather than a straightforward substitution.

Why did the mixture look scrambled?

The eggs may have become too hot. Keep the saucepan off the burner when combining everything and avoid extending the baking time unnecessarily.

Can I double the recipe for a family?

Yes. Double the ingredients and divide the mixture between two shallow baking dishes. Check each dish for doneness, as oven position can affect cooking time.

A Little Comfort, One Dinner at a Time

There’s something lovely about sharing food that doesn’t ask much of the person receiving it. No complicated assembly, no special ingredients to buy and no expectation that they’ll entertain you while they eat.

That’s why this easy mac and cheese earns its place in my dinner rotation. It’s warm, familiar and simple to make, whether I’m feeding my own family or taking a little comfort to someone else.

Sometimes a dish of cheesy pasta is exactly the sort of love a person needs.
