No-Bake Nacho Cheese Pops for Parties and Game Nights

September 12, 2011 by Meaghan Mountford

There’s something about putting a snack on a stick that makes it feel instantly more entertaining. Cake pops might get most of the attention, but savoury snacks deserve a turn too—and these nacho-inspired cheese pops bring a little colour and crunch to the party table.

This adapted version takes the familiar cheese ball and makes it smaller. Cream cheese and grated cheddar form the centre, while crushed nacho-flavoured tortilla chips create a crunchy coating. A short food-safe stick finishes the presentation.

I love the idea for a casual game night, a backyard gathering or a snack platter that needs something different. You can keep the seasoning mild or add a little chilli for guests who enjoy some heat. There’s no oven involved, although you’ll need chilling time to help the mixture firm up.

The original CraftGossip post featured nacho cheese pops on Instructables. The method below offers a separate cheese-ball approach.

Ingredients

Makes approximately 16–20 small pops, depending on size.

  • 250 g full-fat block cream cheese, softened enough to mix
  • 100 g cheddar cheese, finely grated
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Optional pinch of chilli powder
  • Approximately 100 g nacho-flavoured tortilla chips, crushed
  • Optional 1 tablespoon finely chopped, well-drained pickled jalapeños

  • Mixing bowl and spoon
  • Small scoop or teaspoon
  • Tray lined with baking paper
  • Food-safe lollipop sticks or short appetizer picks
  • Shallow bowl for the chip crumbs

Instructions

  1. Mix the cheese base. Stir the cream cheese, cheddar, paprika and garlic powder together. Add chilli or drained jalapeños if using.
  2. Chill until firm. Cover and refrigerate until the mixture is firm enough to shape. Begin checking after about an hour.
  3. Shape small balls. Scoop portions and roll into bite-sized balls. Keep them small so the sticks can support them.
  4. Prepare the coating. Crush the tortilla chips into mostly fine crumbs, leaving a few small flakes for texture.
  5. Coat near serving time. Gently roll each cheese ball in the crumbs, pressing lightly so they adhere.
  6. Add the sticks. Insert a short food-safe stick into each ball. If a ball feels too soft, chill it again before handling.
  7. Arrange and serve. Lay the pops on a platter with the sticks accessible. Keep refrigerated until serving.

Tips for a Better Party Platter

Use block cream cheese rather than a soft spreadable variety for a firmer mixture. Finely grated cheddar also makes shaping easier.

The chip coating will soften as it absorbs moisture, so prepare the cheese centres ahead and coat them shortly before serving. For the first batch, try lifting one finished pop before adding sticks to the rest. If it doesn’t hold securely, serve the balls in mini paper cases instead.

A small bowl of salsa and some extra tortilla chips make a lovely accompaniment. For an adult gathering, you could pair the platter with our blue margarita feature.

What appeals to me most is the flexibility. Make a mild batch, put a little chilli in another, and let the simple platter do the work. They’re a cheerful addition to a snack table without needing elaborate decorations or a complicated menu.
