A bright, bubbly grown-up slushie that tastes like an Italian holiday in a glass
There’s something about an Aperol spritz that just lifts your spirits. Maybe it’s the colour, maybe it’s the fizz, maybe it’s the reminder that it’s okay to sit down for five minutes even when the laundry basket is giving you side-eye from across the room.
Turn it into a slushie and suddenly you’ve earned a little moment of joy. The kind you enjoy barefoot on the back deck, with a dog at your feet and half a to-do list in your head.

I’ve been playing with my ninja slushie maker again (honestly one of my favourite little kitchen gadgets), and this frozen Aperol spritz version has become my go-to on the really hot days. No ice cubes, no watered-down flavour — just a thick, smooth, refreshing cocktail that feels far fancier than the effort involved.

It tastes like something you’d order on holiday, but it comes together in less than five minutes once your base is frozen.
ingredients
(serves 2–3)
- 1 cup Aperol
• 1½ cups prosecco, chilled
• ½ cup sparkling water or lemonade (use lemonade if you like it sweeter)
• ½ cup fresh orange juice
• zest from half an orange
• 1–2 tbsp sugar syrup (optional)
• orange slices or fresh mint to garnish
make your freezer-ready slushie base.
This part is the secret to getting that creamy, icy texture without adding actual ice.
- Combine the Aperol, prosecco, sparkling water, orange juice, zest and sugar syrup in a jug.
- Chill the mixture in the fridge for at least 30 minutes.
- Pour the cold mixture into the ninja slushie cup.
- Freeze for 12–18 hours until completely solid.
Once it freezes, the flavours blend beautifully and the ninja will turn it into a silky, refreshing slush.

- Attach the frozen cup to the ninja base.
- Run the slush program until it becomes thick and icy.
- Spoon or pour into chilled glasses.
- Add a slice of orange or a sprig of mint.

storage
The frozen base cups keep well for 2–3 days and just add the Champagne before adding to the Ninja slushie maker. Once blended, enjoy right away. I use these bags to store the make ahead mixes.
