Kahlua Hazelnut Mocha Popsicles

This boozy adult popsicle recipe is so easy to make with only a few ingredients. You can use any popsicle mold that you have on hand. You can even use a simple ice cube tray with popsicle sticks or plastic cups.

What you will need to make this DIY Summer Popsicle recipe

 

1 cup of fresh cream (unthickened)

1 1/2 cups of thickened cream

1/4 cup of finely chopped hazelnuts

1/4 cup of toasted coconut flakes

1/4 cup of Kahlua (optional)

3 tbs of  sweetened drinking chocolate

a teaspoon of instant coffee

For this recipe, you need to make two separate layers.

For the first layer (the lighter layer) we are going to make a coffee cream, use a small amount of boiling water (1tbs) to dissolve your instant coffee. Then stir this coffee mix into the thickened cream. Pour this into your moulds and allow it to chill for an hour or so.

Meantime make the second mixture.

Use a small amount of boiling water (1tbs) to dissolve your hot chocolate mix. Then add the Kahlua to this mix. You can add a little or a lot it’s up to you how boozy you want these DIY Popsicles.  Add the hot chocolate, Kahlua to the unthickened cream.

mix well and pour into the molds on top of the (almost set) coffee layer. Pop the popsicles back in to freezer for several more hours or overnight.

Once you un mold them allow to melt slightly at room temperature then roll them in the hazelnut and coconut mix. You can then serve them, or pop them back into the freezer on some baking paper and allow the to re-harden. Then serve when you are ready.
