So the other day, I went to lunch with Nick Malgieri. It’s not very often I get to have lunch with a pastry chef and baker of his renown (or ever?), so I had to open this post with that sentence. If you’ve not heard of Mr. Malgieri, I can’t do his bio justice, read about him HERE. And this is his new book: bake! Essential Techniques for Baking Perfection, filled with essential techniques of baking (including pastry dough and tarts, cookies, puff pastry, breads and rolls, brioche, Danish pastry, cakes, biscuits and more), gorgeous step-by-step photographs and tons of variations on the master recipes. Recipes include a chocolate meringue tart, ground beef empanadas, fig and raspberry croustades (see him making these on Martha), gruyere and walnut bread, pear and ginger cake, devil’s food bombe…
