A gallette is like a pie, but without the perfection. You roll out the dough, pour in the filling and lift the edges around the filling and bake. Of course you could make it fancy like the one pictured too. It is more like a square pie that looks more elegant than it’s round cousin. Since I’m lazy, I just like the dump and lift the edges version.
