Zucchini is a classic late Summer-Early Fall vegetable. If you love growing this green squash, and seem to have oodles and oodles of it popping up in your garden, you may want to consider using it in your baked goods. It gives a great texture and color to your treats, and if you don’t count all the sugars and carbs in your goodies, maybe it even helps it to be a little more healthy.
