This version is rich, salty, and smooth, and I make a fresh jar almost every week. It’s perfect for everything from egg salad to dipping keto crackers, and honestly? I’ve been known to sneak a spoonful straight from the jar.
This salty mayo has a little extra flavor thanks to garlic and Dijon, and you can tweak the saltiness to your taste. It’s fast, foolproof, and doesn’t have any weird ingredients or fillers.
1 egg (room temperature)
1 cup avocado oil (or light olive oil)
1 tsp Dijon mustard
1 tbsp apple cider vinegar or lemon juice
½ tsp garlic powder (optional but recommended)
¾ tsp sea salt (I sometimes go up to 1 tsp)
Optional: pinch of white pepper or smoked paprika
Add everything to a clean, wide-mouth jar or tall container.
Place a stick blender at the bottom and blend on high without moving it for about 15 seconds.
