Amma’s Spicy Mango Chutney

Today, I want to share with you my beloved grandmother’s recipe for Amma’s Homemade Spicy Mango Chutney. This sweet and spicy condiment is the perfect addition to any dish, adding a little extra flavor to your favorite meals. This recipe has been passed down from generation to generation in my family and I’m so excited to share it with you! Here’s what you’ll need:

Ingredients:

4 ripe mangoes, peeled and diced
1 cup granulated sugar
1/2 cup white vinegar
1 teaspoon salt
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 teaspoon mustard seeds
1 teaspoon fennel seeds
1 teaspoon red chili flakes
2 cloves of garlic, minced
1-inch piece of ginger, grated
2 small red chilies, chopped
2 tablespoons olive oil
Instructions:

First, grab a large saucepan and combine the diced mangoes, sugar, vinegar, and salt. Cook over medium heat, stirring occasionally until the sugar has dissolved and the mixture has thickened, about 20 minutes.
In a separate pan, heat the olive oil over medium heat. Add the cumin seeds, coriander seeds, mustard seeds, fennel seeds, red chili flakes, minced garlic, grated ginger, and chopped red chilies. Cook for 2-3 minutes, until fragrant.
Now, let’s add some spice! Stir the spice mixture into the mango mixture and continue to cook for an additional 5-7 minutes, until the chutney has thickened and the flavors have melded together.
Finally, remove the pan from heat and let the chutney cool completely. Store in an airtight container in the refrigerator for up to 2 weeks.
There you have it! My grandmother’s delicious recipe for Amma’s Homemade Spicy Mango Chutney. This condiment is perfect for spreading on sandwiches, dolloping onto curries, or serving alongside grilled meats. So, give it a try and let me know what you think!

Mango Salad

My favorite summer salad recipe – Mango and Onion Salad. This sweet and tangy salad is the perfect way to beat the heat and enjoy all the flavors of summer in one delicious dish. Here’s what you’ll need:

Ingredients:

2 ripe mangoes, peeled and diced
1 red onion, thinly sliced
1 tablespoon freshly squeezed lime juice
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh cilantro, chopped
Instructions:

Start by prepping your ingredients. Peel and dice the mangoes and thinly slice the red onion.
In a large bowl, combine the diced mangoes and sliced onion.
In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper to make the dressing.
Pour the dressing over the mango and onion mixture and gently toss to combine.
Finally, add the chopped cilantro to the bowl and give everything a final stir.
Chill the salad in the refrigerator for at least 30 minutes before serving.
And there you have it! My delicious and refreshing Mango and Onion Salad. This salad is perfect for those hot summer days, and it’s sure to become a staple in your recipe collection. Serve it as a side dish or add some grilled chicken or shrimp for a complete meal. Give it a try and let me know what you think!
