I have also included my personal favorite recipe using a Pumpkin Granola. Even though I have made my own pumpkin granola, I have to admit at times I cheat and buy my pumpkin seed granola, I have included a link below for my favorite store-bought granola. Pumpkin Granola Cups
Prep: 20 Minutes
Makes: 6 Cups (5.5 oz.)
Ingredients:
3 cups pumpkin puree
2 cups plain yogurt (I used greek)
3 cups vanilla granola or pumpkin granola
whipped topping for topping
cinnamon for topping
Instructions:
Add pumpkin puree to the cup. Scoop in yogurt then granola. Repeat the layers again.
Top with whipped topping and cinnamon.
Tip: Do not add whipped topping until ready to serve. Keep cold til ready to serve as well.

My Pumpkin Granola Recipe
- 2 cups of quick rolled oats or rolled oats chopped
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1/2 cup pecan nuts pieces or chopped
- 2 teaspoon pumpkin pie spice
- 1/2 teaspoon sea salt
- 2/3 cup pumpkin puree
- 1/2 cup maple syrup
- 2 tablespoons coconut oil
Mix together in a bowl until well combined. Spread the mixture evenly over the prepared baking sheet.
Bake in the preheated oven, stirring every 15 minutes until desired crispness is reached, 30 to 45 minutes.
