I have to admit, Marisa Churchill’s Sweet and Skinny cookbook might just make me change my mind about “light” desserts. Desserts are one area I’ve never skimped. But Churchill’s well-constructed philosophy–one that doesn’t rely solely on lesser substitutes, but rather a thoughtful re-examination of ingredients–is pretty convincing. Churchill (who has competed on Top Chef and the Food Network Challenge) promises to keep cakes moist, brownies fudgy, custards creamy and pie crusts flaky with “tricks that bend the basic rules and ratios of baking and pastry-making so you can cut the fat and calories and still get it right.”

The book covers the foundations of baking; classic recipes such as PB and J Cookies, Whoopie Pies, Red Velvet Cupcakes and Lemon Bars; quick desserts, such as Spiced Chocolate Mousse and Blackberry Napoleon; treats such as Papaya-Mint Popsicles and Pecan Sticky-Bun Coffee Cake; “dinner party showstoppers” such as Butterscotch Pudding and Individual S’mores Tarts; and holiday favorites, including Tiramisu Layer Cake and Pumpkin Pie.     Too many “diet” desserts focus on substitute ingredients and processed/fake foods. I prefer the real thing but done in a way that keeps it from being extreme. No small order! This is the most creative approach to that philosophy I’ve seen. Thanks for a great giveaway!

    I enjoy making sweet treats, but I never eat them (I bring them to my co-workers and they tell me the snacks are great). Maybe if they were a bit “lighter” I would partake. My not partaking in my own desserts is based on the fact that I WOULD NOT STOP EATING THEM! So lighter would be better :P

    This philosophy of choosing ingredients carefully as opposed to using fake, substitute foods is more along the lines of how I try to cook. I’d rather have something tasty that’s naturally low in fat or sodium or whatever than use artificial anything.
