Nadege told me that according to tradition, you (hopefully successfully) flip the first crepe with your right hand while holding a gold coin (a gold Louis) in the left hand to be sure you prosper throughout the year. It is also custom to keep the first pancake in a cabinet for one year to ensure an abundant harvest. And be sure to light all the candles in the house on Candlemas.
